Danette's BBQ Sandwiches
In a crock pot combine the following:
1 cup coke
1/4 cup Apple Juice
1/4 cup Worchestshire (I have no clue how to spell that)
1 tsp minced garlic
1 tsp beef bouillon granules
1/2 tsp ground mustard
1/2 tsp chilli powder
1/4 tsp red pepper
Keep 1/2 cup of this out for BBQ sauce later if you want. Then add in a chopped onion and a Pot Roast. Cook on high in your crock pot all day. Shred Beef when done. Take the 1/2 cup you saved and on the stove add 1/2 cup Brown Sugar and 1/2 cup Ketchup and whisk til it seems good. Serve on good buns with some swiss cheese and/or sauteed onions. Enjoy!


Beef Carnitas

1 Cup chopped onion
3 Cloves Garlic, crushed
2 pounds beef stew meat, trimmed
1 Cup less-sodium beef broth
1 teaspoon Sugar
3/4 teaspoon salt
½ teaspoon crushed red pepper
1 large unpeeled orange wedge

Heat a large dutch oven over medium-high heat. Coat pan with cooking spray. Add onion; sauté 4 minutes or until tender. Add garlic; sauté 1 minute. Add beef; sauté 5 minutes or until beef is browned on all sides. Stir in broth, sugar, salt, and pepper; nestle orange section into beef mixture. Bring to a boil. Cover, reduce heat, and simmer 1 ½ hours or until beef is tender. Remove and discard orange. Continue simmering, uncovered, 8 minutes or until liquid almost evaporates, stirring frequently. Yield: 4 cups (serving size: ½ cup) Serve in tortillas, topped with pico, avocado, cilantro, sour cream and cheese.

Beef Stroganoff in the Crock Pot
4 lbs of Beef Stew Meat (about 2 small packages)
1 can cream of mushroom
1 can cream of chicken
1 can cream of celery
1 can cream of onion
1 package of fresh mushrooms
Egg Noodles
Parmesan Cheese

Place everything but the mushrooms in the crock-pot. Let it cook all day. When ready to serve, make some egg noodles, saute' the mushrooms in butter and soy sauce and sprinkle with a little parmesan cheese.


Winnie's Mexican Spaghetti
2 lbs ground beef
2 pkgs taco seasoning
1 to 1 1/2 cans (cream of mushroom)
1 green bell pepper (chopped)
1 yellow onion (chopped)
1 pkg spaghetti noodles
Small Velveeta cheese Mexican style

Brown ground beef and add bell pepper, onions, and taco seasoning as directed on taco seasoning package.
Add the can of cream of mushroom to browned ground beef.
Boil spaghetti noodles.
Place drained noodles in a 13 X 9 baking dish.
Spread ground beef on top of noodles.
Melt Mexican Velveeta Cheese; spread on top of meat. (add a little milk to make cheese creamy)

Bake 20-25 minutes at 350!


One Pot Dinner by Samantha

1/2-1 lb. Ground beef browned, drained
3/4 lb. Bacon cooked, drained cut in small pieces
1 cup chopped onion, cooked in skillet
2 cans (15 oz. Size) Pork & Beans
1 can (16 oz.) kidney beans (drained)
1 can (16 oz.) butter limas (drained)
1 cup ketchup
1/4 cup Brown Sugar
1 T. Liquid Smoke
3 T White Vinegar
1 tsp. Salt
1 tsp. Pepper

Add ingredients to large crock pot. Stir together. Cover and cook on low 4-6 hours.



DeAn's Ravioli Lasagna
1 package Frozen Cheese Ravioli - no meet (Rosetta is a good brand - don't use mini's)
1 lb of Italian sausage or flavored meat. (can add more too if you want)
2 jars of spaghetti sauce
Mozzarella Cheese
Sauteed Mushrooms ( I think I will add these next time - sauteed in Teriyaki is awesome!)

Cook the meat and spice it up however you want, if needed. Layer the still frozen ravioli on the bottom of a casserole dish. Top with some meat, some sauce, some cheese - keep repeating layers. Cook at 350 for 45 min. Great served with Texas Toast.


Spinach Burritos

 
1 lb ground beef cooked with taco seasoning
1 box frozen spinach
2 cups shredded mexican cheese (add last and add more to taste if desired)
1 jar hot sauce - whatever is your favorite
 
mix all together in a saute pan and serve in tortillias...you can add things like diced tomatos or sour cream as you wish...
 

Chili
2lbs ground beef (I add more because I like more meat)
1/2 onion chopped
2 packages of chili seasoning
6 cans peeled stewed tomatoes
1 small 14oz bottle of ketchup
1/2 cup brown sugar
salt and pepper
3 cans pinto beans
garlic salt
box of jiffy cornbread

Cook the ground beef - when done add the chili seasoning and the onions. Place in big stew pot with all the other ingredients (except corn bread). Let simmer for awhile and serve with cornbread. Great meal!


Laura's Mediterranean Dish

Saffron rice - buy a bag and cook using instructions on bag.
Cooked and drained ground beef seasoned with curry to taste
One can diced tomatoes undrained
Manischewitz brand Falafel cooked followng instructions on box
Manischewitz brand Hummus cooked following instructions on box
 
Mix all together except the hummus and top with feta cheese...and eat with pita bread and hummus



Spicy Homemade Spaghetti Sauce
(feeds 4)
1 big can (28 oz) of crushed or petite diced tomatoes
4 Cloves of minced garlic
1/4 cup olive oil
1 tsp red pepper flakes
1 tsp salt

Put the garlic and the olive oil in a sauce pan and let it sauté at medium high until garlic is golden brown. Add tomatoes and red pepper and salt. Let it go on medium high with lid for 10-15 minutes. It will start to come together. Add the cooked meat you desire (meatballs, italian sausage) and let it simmer for a while until you are ready to eat, without the lid on. 2 minutes before you eat - add 2 tsp of butter. Enjoy!



Laura's Sloppy Joes
 
Toasted wheat buns
1 can Manwich Sloppy Joe sauce
1 lb ground beef
sliced onions
Cheddar cheese
 
Cook ground beef until no longer pink and drain. Add sauce to the skillet cook through. Toast Buns. Make sandwich - meat sauce, onions, cheese.
 
Serve with chips, tots, or french fries...this is a man's meal!!!


Tina's King Ranch Taco Salad
1 lb. beef
1 can tomato soup
1 can King Ranch beans
1  can rotel
1  can corn (optional)
Brown beef and add soup, beans and rotel.  Simmer about 10 mintues.  Put on top of crushed corn tortilla chips.  Top with taco staples: cheese, lettuce, tomato, onion, sour cream and enjoy!



Crock Pot Pasta Sauce
Ground Meat, Meatballs OR Sausage (whatever you have will work)
2 (15 oz) cans of tomato sauce
2 (14 1/2) cans of diced tomatoes undrained
2 (6 oz) cans of tomato paste
1 8 oz pkg fresh sliced mushrooms

1 1/2 cups chopped onions
1 cup water
2 tbsp brown sugar (I doubled this)
2 tsp dried basil
1 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
1/8 tsp red pepper (I think next time I may add a bit more - I like a kick!)
2 garlic cloves minced
1 beef-flavored bouillon cube

Cook meat and drain. Add all ingredients to the crock pot and cook on low for 6 to 7 hours. Serve over pasta.


Mexican Casserole
1 can rotel undrained
1 can cream of mushroom
1 lb browned ground beef
 Mexican shredded cheese
 Crushed tortillia chips
 Mix first three together and layer greased casserole with
1.  chips
2.  soup/tom/beef mixture
3.  cheese
 
Repeat layers
 
Cook at 350 for 20 minutes! Yummy!



Asian Peanut Beef & Noodles

Prep time: 15 minutes Total time: 30 minutes


¼ lb. (4oz.) spaghetti, broken in half (I used whole wheat)
1 ½ cups of sugar snap peas
½ cup of red bell pepper cut into strips
¼ cup of Kraft Light Done Right! Catalina Reduced Fat Dressing
½ lb. (8oz.) well-trimmed boneless beef sirloin steak, cut into thin strips
(I used 1 full pound of meat)
1 Tbs. of peanut butter
1 Tbs. lite soy sauce
2 green onions, sliced
¼ cup of Planters Dry Roasted Peanuts

Cook spaghetti as directed on package, adding snap peas and red pepper to the cooking water for the last 2 minutes of spaghetti cook time.

Meanwhile, heat dressing in large skillet on medium-high heat. Add meat; stir-fry 3 min. or until meat is barely pink in the center. Add peanut butter and soy sauce; stir-fry 1 min. until sauce thickens.

Drain spaghetti and vegetables. Add to skillet; toss with meat mixture. Stir in green onions: sprinkle with peanuts.




Jennifer's Italian Muffuletta
2 packages Pillsbury Crusty French Loaf
3 Tbls. Fresh Parmesan Cheese, grated
Good Seasons Italian Dressing Mix, dry packet
Garlic, pressed
Olive Oil
Balsamic Vinegar
2/3 cup black olives, chopped
2/3 cup green olives, chopped
2 lbs. Deli meat such as roast beef, hard salami, or turkey
1 ½ lbs. Sliced cheese such as provolone, swiss, or mozzarella

Bake bread in advance and let cool. Cut bread horizontally.
Chop olives & mix into Italian dressing mixture.
Press garlic into mixture and spread onto bread.
Layer meat & cheese. Cover & heat on stone until cheese melts.
Slice & Serve.


Rebecca's Crock Pot Roast
1 Chuck Roast
1 envelope of Ranch Dressing
1 envelope of Italian Dressing
1 envelope of Brown Gravy
1 1/2 cups of water
Place all ingredients in the crock pot and let it cook on low all day. Serve with mashed potatoes. A good hearty meal!


Carolyn's Rocky Mountain Brisket
Take the following and rub on both sides of the brisket
1 1/2 tsp salt
1 1/2 tsp pepper
2 tbsp chili powder
1 tsp crushed bay leaves
2 Tbsp liquid smoke
Once seasonings have been rubbed, place brisket fat side up on foil and wrap it tight to keep seasonings in. Cook at 325 for 5 hours. Take out of oven and rub off bay leaves and other remaining seasonings. Cut against the grain. Serve with BBQ sauce.

Pot Pot Roast (ha - funny name I just made up)
Pot Roast is so hard to make taste unique and really good (I think). This recipe can help and it is great with the strawberry salad and the Cauliflower Mashed Potatoes.

1/2 cup of flour
2-3 cloves garlic - minced
1/2 each of onion and garlic powder
1/4 teaspoon black pepper
3 to 5 lb chuck Pot Roast
2 Tbsp olive oil
1/2 cup Kikkoman Teriyaki Marinade and Sauce
6 small white onions quartered

In a large Zip Lock bag, shake together garlic powder, onion powder, pepper and flour until well mixed. Place meat into bag, seal and coat meat well with mixture on all sides. Remove meat; add 1/2 cup water to the bag, mixing well, seal and set bag aside in refrigerator for later.

On skillet brown meat on both sides in olive oil. Then take meat and place it in the crock pot with the garlic and Teriyaki. Cover and let it cook on high for about 6 to 8 hours. 2 hours before you eat it, place the onions and the zip lock bag mixture in the crock pot. Stir and let cook for 2 hours more. Cut up and serve with above recommendations.

Debbie's All Day Ribs
My good friend Debbie gave me an awesome way to cook ribs. These are on sale a lot on the grocery game - so save this recipe for sure!

Debbie's All Day Ribs:
Take Ribs and rub them with salt, pepper and garlic salt.
Wrap the ribs really tight in some foil. Where no meat is showing.
Place in a dish with some sides (in case juices escape the foil)

Put in oven first thing in the morning before you leave for the day at 200. Let them cook all day. About 30 minutes or so before you are ready to eat, open the foil and spread some barbecue sauce (or whatever you want) on the ribs and let it brown a little. Then eat and enjoy!


Meat Loaf
This recipe was given to me by Andee, my sister. If you like Meat Loaf - this one is AWESOME!

Meat Loaf:
2 lbs ground chuck
1/2 diced medium onion
1/4 cup diced bell pepper
1/2 cup oatmeal
2/3 cup crushed crackers (saltine)
1/2 cup catsup
1 egg slightly beaten

Mix all ingredients by hand, put in shallow baking dish sprayed with Pam. Bake one hour at 375.

Sauce:
1 can diced tomatoes (8 oz)
1/2 diced onion
1/4 cup diced bell pepper
1/2 cup catsup
pepper

Let Simmer and pour over meat loaf. Cook about 20 more minutes in the oven with sauce on top.

Spaghetti Lasagna
This is a great alteration to Spaghetti and Lasagna. A great meal to fix too if you need to make a meal for other folks. Given by my sister Kim.

Spaghetti Lasagna:
1 pkg bow tie pasta (we use whole wheat when we can)
1 block of cream cheese
1 to 2 pounds of ground beef
1 large jar of spaghetti sauce of choice
cheddar cheese
garlic salt

Cook pasta, drain and add cream cheese and garlic sauce to the warm drained pasta. Mix together until the cheese is melted. Cook ground beef, drain and add spaghetti sauce. Place pasta and cheese mixture on bottom of 9X13 pan and then spread ground meat mixture on top of that. Sprinkle with cheddar cheese.

Bake 350 for 30 minutes or until heated through.

Swedish Meatballs
A great easy meal - a nice sweet meatball and rice mix. :)

Sauce:
1 cup pineapple juice
1/4 cup soy sauce
3/4 cup catsup
3 Tbsp brown sugar
Mix pineapple juice, soy sauce, catsup and brown sugar.
Add in some frozen meatballs.
Let it simmer for one hour - more pineapple or water may be added as needed. When ready to serve, spoon meatballs and sauce over some white rice.
