Perfect Rice
Heat oven to 350 degrees
Boil water on the stove at the ratio of 1 1/2 times as many cups as the rice.
In a skillet sweat some sliced onion in olive oil til it turns white.
Add the dry rice to the skillet and sauté for about a minute
Add the onion and dry rice to the now boiling water - cover
Put whole pot in the oven at 350 for 16-18 minutes. Once time is up - take the pot out and let it sit for a few minutes. Remove lid, add margarine, a few bay leaves, salt and pepper. Replace lid and let it stand for another 5 minutes. Stir up and serve.
Okra or Asparagus or Any other veggie
Place on cookie sheet with appropriate parts cut off
Put salt and pepper and olive oil on top and cook at 400 for 15 minutes until almost dark.
Broccoli Salad
Broccoli 1/2lb
Purple Onion small
Sharp Cheddar
Bacon (real or bits)
Combine the following and mix over salad
Mayo - 1/2 cup
Sugar - 1/4 cup
Vinegar - 1 Tbsp
Apple Coleslaw
3/4 cup Miracle Whip
1 Tbsp Honey
1 pkg (16oz) coleslaw blend
2 apples (preferably one red and one green) chopped
Mix dressing and honey in large bowl. Add remaining ingredients and mix lightly. Refrigerate one hour.
Cooking Fresh Corn on the Cob
Put the entire ear(s) of corn on a cookie sheet (silks and husks and all) and bake for 40 min. at 350.
When you remove the corn from the oven, I just use a hot pad to hold the corn an remove the husks, etc. The silks come off really easily and the corn is ready to serve. This part just takes a second and it tastes great!
Camey's Ten things to do with a veggie tray from Sam's:
1. Healthy snacks for kids (mine actually pull it out of the refrigerator on their own!)
2. Use the veggies to add to a salad.
3. Steam the broccoli for a side.
4. Steam the cauliflower for a side.
5. Dice the veggies and add to soup.
6. Slice the tomatoes and saute with olive oil and garlic for a quick pasta sauce.
7. Chop the veggies and add to stir fry.
8. Use the diced celery and carrots, add onions and a can of tomatoes to make a red pasta sauce.
9. Toss the carrots with olive oil and some fresh rosemary and roast at 400 for about 15-20 minutes.
10. Fill the celery with peanut butter for a healthy snack.
Fresh Green Beans with Soy
Take some Soy Sauce and some Almonds and cook the green beans over medium heat on the stove! You can use frozen ones too!

Take some garlic, olive oil and some torn up bacon and cook the green beans over medium heat on the stove. You can use frozen ones too!
Corn Casserole (found in Paula Dean's The Lady and Sons Too Cookbook)
One can of whole kernel corn drained
One can of cream style corn
One 8 ounce package of Jiffy corn muffin mix
1 cup sour cream
1/2 cup melted butter
Stir all ingredients, pour in greased casserole dish. Bake at 350 for 45 to 60 minutes or until golden brown.
Can add a handful of shredded cheese too to change it up a bit. :)
Green Bean Fixer Upper
1 or 2 cans of Green Beans
2 Beef Bouillon Cubes
1/2 sliced onion
Pour beans in to pot, add the beef bouillon cubes and sliced onions. Bring to a boil and let simmer for a few minutes. Tastes great!
Just like Luby's Mac and Cheese
2 cups of dry elbow macaroni
2 TBSP. of non-fat dry milk
2 TBSP. of flour (white)
1 TBSP of melted butter
1 ¼ cups of boiling water
12 oz. of Velveeta cheese (divided)
¼ tsp. salt
Cook macaroni according to package directions. Heat oven to 350 degrees.
In large bowl mix, dry milk, flour and butter. Gradually add boiling water, beating consistently with electric mixer. Add 1 ½ cups of cheese continue beating until smooth and creamy. Stir in macaroni and 1 cup of cheese and salt. Put in lightly greased 2 qt. baking dish. Cover with foil and bake for 25 minutes. Remove from oven sprinkle with remaining cheese. Bake 1-2 minutes longer until cheese melts.
Sarah's Veggie Casserole
This is a great assemble ahead side dish and awesome for big crowds or holiday meals. Given to me by Sarah Reichling.
Layer the following (DO NOT MIX):
1. On bottom place 2 cans of french style green beans.
2. Next layer 2 cans of white shoepeg corn
3. I can slice water chessnuts on next layer.
4. On Layer 4 mix together the following and place on top of the chessnuts: 1 can cream of celery, 8 oz sour cream, 1 cup shredded cheese (we suggest colby jack but you can choose differently if you like)
5. For the last layer crush one tube of ritz crackers and mix with 1 stick of melted butter. Sprinkle this on top.
Bake at 350 for 30 minutes.
Creamy Mashed Cauliflower (just like mashed potatoes!)
I am not a huge cauliflower fan but when made like this it is a great low carb substitute for mashed potatoes!
2 or 3 frozen bags of cauliflower
1 clove of garlic
1/4 cup of mayonnaise (or miracle whip)
1/4 tsp of salt
Steam cauliflower and garlic for 15 minutes or until tender and drain.
Blend cauliflower, garlic, mayo and salt until creamy like mashed potatoes. Garnish with pepper and serve with gravy if desired.
Grandma Schrader's Cole Slaw
1 cup egg yokes (can add white's also)
1 cup sugar
1 cup vinegar
1 cup of evaporate milk (or cream)
1/2 tsp mustard (optional)
Bring to boil in a double boiler and stir. Beat together as cooking to thicken. Mix with Mayo. (1/2 mayo and 1/2 mix). Then stir in the cole slaw lettuce mix.
